Healthy Vegan Chocolate Chip Cookies

Who else loves chocolate chip cookies? I know I do, these healthy vegan chocolate chip cookies are perfect for people like me who love cookies but don’t want to feel guilty after eating one. Yes that’s right, these are surprisingly “healthy” for a cookie!

You’re probably wondering what makes these cookies healthier than a traditional cookie. Well firstly they are packed with a ton of fiber and potassium. And they aren’t packed with refined sugars and added cholesterol from animal bi-products like traditional chocolate chip cookies. You wont believe how addictively delicious these bad boys are.

These healthy chocolate chip cookies are made with spelt flour which surprisingly has some amazing health benefits. It’s high in fiber so it is great with combating bloating, excess gas, and diarrhea. The fiber in the spelt is also helps lower dangerous levels of cholesterol in the body. Nut butter butter is also an added benefit as well, whether you choose almond or peanut butter they both offer  benefits like protein, vitamin, minerals, and fiber.

Not only are these cookies healthy AND delicious, but they also come together in just a snap. Oh yeah did I mention that this is a one bowl recipe? You guys know I love one bowl recipes because that always means EASY CLEAN UP!

These are the perfect cookies to make for just snacking or you can share them with friends. But they’re so good I’m not sure how many of these are going to make it to your friends and family lol.

Take these the extra mile and make them into Vegan Ice Cream Sandwiches! I recently found a new dairy free ice cream called NadaMoo. I was so pleasantly surprised with how GOOD NadaMoo tastes; most vegan ice creams you can tell they are well, vegan ice cream. Healthy Chocolate Chip Cookies
These healthy vegan chocolate chip cookies are quick to put together, and taste just as great as a traditional cookie without the guilt.

Instructions
  1. In a stand mixer add the vegan butter along with the coconut or brown sugar, and nut butter of choice. Mix until everything comes together. (if using flax egg mix it together and set aside before beginning recipe - beat into the mixture before adding the dry ingredients.)
  2. Sift the dry ingredients over the butter mixture and mix until slightly combined.
  3. Pour in the chocolate chips, vanilla extract, and non-dairy milk. Mix until the dough comes together into one ball. Scoop the dough into 2 inch balls and place them into the fridge for at least 20 minutes.
  4. Preheat the oven to 375 degrees. Place the cookies on a parchment paper lined sheet pan and lightly press them down flat with your hand. Bake for 12 minutes or until the edges are slightly brown.
  5. GO the extra mile and turn these cookies into vegan ice cream sandwiches!
